The southern Chinese province of Yunnan is known for Pu Erh teas in particular. Furthermore some traditional cultivation and processing methods for the production of white and yellow tea are also maintained.

TEAS FROM THE MENGHAI ORGANIC TEA PROJECT

ORGANIC YUNNAN YUE GUANG BAI

Our organic Yue Guang Bai (also called Yue Guang Meiren) is grown and processed in the southern Chinese province of Yunnan. Its leaves are harvested from tall, historic Qing Mao tea trees, which are commonly used for the production of Pu Erh tea. In spring the closed leaf buds and some leaves are harvested early in the morning and are then dried gently. Our organic Yue Guang Bai is cultivated under fair conditions.

ORGANIC YUNNAN HUANG YA

Huang Ya is a yellow tea, which consists entirely of hand-picked leaf buds. The cultivation project from which this tea rarity originates from is located in the highlands of the southern Chinese province of Yunnan. After harvesting, the leaf buds are first allowed to wither, after which they are dragged into small piles. In this way a very limited, very slight fermentation takes place. Through the dragging into small piles there is not much oxygen available, so the possibility of oxidation is limited. This process over a few hours creates heat. Once a specific temperature is reached inside the pile, the leaves are again laid out to dry.
